A multi-purpose kitchen knife with unique western style cutting edge.
Traditionally Japanese knives are angled to cut on the pull stroke; while Western knives, are angled to cut on the push stroke.
Although this knife is made in Japan, it is ideal if you use a pull cutting motion, similar to the Western style of cutting.
Ideal for cutting raw meat, vegetable, trimming and stripping sashimi.
This knife is shorter and lighter than Global Classic Gyuto Knife 20 cm.
The reason is because some customer requested the same type of knife but lighter and shorter in size.
Avoid cutting on hard surfaces such as stone, metal or glass.
Please make sure to use a wooden or plastic cutting board so that it doesn't destroy your knife edge.
The knife is not suitable for cutting through bones, frozen food or other hard produce such as pumpkin or corn as the blade can be easily damaged.
Double-edged blade suitable for right or left-handed person.
